Ingredients
1 KG Mock Meats
3 tablespoons Mild Curry Powder
1.50 teaspoons Turmeric Powder
1 tablespoon Oil
Bamboo Sticks
3 cups of Grounded Peanuts
2 teaspoons Red Curry Powder/Paprika
6.5 ML Coconut Milk
600 ML Water
4 tablespoons Raw/Palm Sugar
Pinch of Salt
Preparation
Step 1
Cut the mock meat into small pieces, marinate with curry powder, turmeric, and oil, then cover and refrigerate overnight.
Step 2
To prepare the satay sauce, heat oil over low heat and add red curry powder or paprika, stirring briefly. Add coconut milk, water, and peanuts, then increase the heat to medium and stir constantly until it comes to a boil. Reduce the heat and simmer while stirring for another 3 minutes—the sauce is ready to serve.
Step 3
Thoroughly wash the bamboo sticks. Thread 3–4 pieces of marinated mock chicken onto each skewer and grill over hot charcoal for about 5 minutes per side. The satay chicken is now ready to serve.
Step 4
Arrange the satay on a plate, drizzle the satay sauce over it, and serve with cucumber and pineapple on the side.
